When there isn’t enough “left overs” from the night before for two to have a proper lunch, make soup! I had 1/2 a pork chop, about 2 cups of cooked white rice, and about 2/3 of a cup of peas left over. I made some veggie stock, about 5 cups, cut up the chop into bits, and put the meat, rice, and peas in the pot. Added about a 1/4 cup of chopped green onions and a teaspoon of red pepper flakes. Brought to a gentle boil, simmered a few minutes. Done. Soup’s on!
